Laguna de los Cóndores translates as ‘Lagoon of the Condors’. Farmers in Luya Province, Peru are proud of their heritage as people of the mountains, living as high in the mountains as condors fly. They speak of their ancestors, the Chillaos, as people who were made strong and “indomitable” by their lives among the clouds in the high Andes.

According to legend, the Chillaos were the first to grow coffee at such high altitudes and to discover the incredible quality that could be achieved at such heights. The members of the cooperative see coffee as their heritage: a source of energy, strength and courage for their ancestors and an integral part of social, cultural and economic life for member farmers. The cooperative is focused on improving quality of life and income for its members. They offer several projects designed to improve soil health, increase coffee quality and promote healthy, happy lives for its members.

After being selectively handpicked, the coffee is depulped by hand on the farm and fermented for 36 to 48 hours. After washing to remove the remaining mucilage, the parchment is sun dried on patios. The dried parchment is then sold to the cooperative for further preparation and sale.

Coffee cultivation at high altitudes makes for slower maturation of the cherry and thus a very complex and fruity, juicy cup.

CUPPING NOTES: forest berries, sweet caramel, hint of florals, syrupy body

SIZE: 250 g / 1 kg

OUR PREFERRED EXTRACTION: Clever Dripper or Hario Switch - 18g coffee (medium grind) and 300g water (100°). Grind your coffee and set it aside - not into the dripper or filter paper just yet! Prepare the Clever with a filter paper (keep the valve closed) , bring the water to a boil and pour the 300g of water into the Clever on a scale. Now add the ground coffee and gently stir it until no dry pockets of coffee remain. Wait 2’30”, then stir the coffee gently, wait about 30” and then place the brewer onto your carafe or cup (or open the valve on the Switch). Let it drain completely and enjoy!
