Coffee from Guatemala holds a dear place in our hearts and have their fix spot in our portfolio. Juana Jimenez' beans from Finca la Esperanza have been a staple since we started working with Primavera in 2019 and they keep making us smile year after year. The coffee showcases what we love about Guatemalan coffees: sweet and juicy with a crisp and lively acidity.
This coffee was pulped the same day of the (selective) picking and fermented for 48 hours.
After the fermentation and removal of the remaining mucilage, it was kept in fresh water for further 12 hours to ensure high sweetness and clean mouthfeel. The coffee was then sundried on a patio for six days.
